Corn Pudding
Fred Rogers' grandmother's recipe!
Ingredients:
16oz can cream style corn
2 eggs
2 tablespoons of flour
1/2 teaspoon of salt
1/2 cup of milk
2 tablespoons of melted butter
Instructions
Beat the eggs. Then add all the other ingredients and mix well. Put it into a buttered casserole dish. Bake at 350 for one hour or until well-set.
Tofu Burgers
Fred Rogers was a vegetarian and this recipe appeared in 1988 Celebrity Cookbook from McGinnis Sisters Special Food Stores.
Ingredients:
20 ounces of firm tofu
1 cup chopped onions
3 tablespoons of oil
2/3 cup of breadcrumbs
2 tablespoons of Worcestershire Sauce
1 tablespoon soy sauce
Garlic, salt to taste
3 eggs, beaten
Instructions:
Cook chopped onions in oil until tender, not brown, and then cool. Drain tofu and crumble with fingertips. Add all ingredients to tofu and mix well. Form into burgers. Fry in butter until crisp and evenly brown on both sides.
Snow Pudding
The perfect dessert for your party!
Ingredients:
3/4 cup of sugar
1 teaspoon of plain gelatin
1 1/4 cup of water
1/2 cup lemon juice
1 tablespoon grated lemon zest
2 egg whites
Instructions:
In a medium-sized saucepan, mix the sugar, gelatin and water over high heat; bring to a boil, stirring all the while. Remove from heat and mix in the lemon juice and zest. Put bottom of pan in cold water; cool until the mixture mounds when dropped from a spoon.
Meanwhile, beat the egg whites until stiff. With a rotary beater, slowly blend the gelatin mixture into the egg whites. Stir with a rubber spatula until it holds it shape. Spoon into dessert dishes and refrigerate until firm.
